Cold dishes are a great option for children as a snack after school, on a picnic or at home, especially during the summer.

Salads, soups, dipping sauces and sandwiches are also healthy dishes that provide the nutrition that children need to grow up strong and healthy. Cold dishes also give children a certain independence at meals, but without exposing them to the risk of burning themselves.

Gazpacho

You can prepare gazpacho in the traditional way, or with fruit. Here is a basic recipe:

Ingredients

  • 1 cucumber
  • Salt to taste
  • About ½ kg of tomatoes
  • 1 green pepper
  • 1 clove of garlic
  • 2 teaspoons vinegar
  • 2.5 dl water
  • About 2 dl olive oil

Do this:

To cook gazpacho, chop cucumber, pepper, garlic and tomato into small pieces. Then mix the pieces in a blender together with the rest of the ingredients. Mix everything  until you get a smooth mixture.

When the mixture is ready, it should also be passed through a fine sieve to remove all seeds and pieces of shell from the liquid. Then cool the soup in the fridge and serve it cold. 

A refreshing alternative that children also like a lot is to add about ½ kg of strawberries to the soup and mix them as well. You can also try with watermelon, cherries or slices of peach. Such a gazpacho then gets a sweet taste, something that is very refreshing in the heat.

Greek salad

International food also fits very well on the dinner table. Here we have, for example, Greek salad. Children can really appreciate other cultures while eating delicious and nutritious food.

Do this:

  • Chop the following into small pieces: 4 tomatoes, 1 onion, 1 cucumber, about 120 grams of  feta cheese.
  • Then mix all the ingredients in a bowl.
  • Add  2.5 dl black or green olives  and a handful of capers. You can also add natural yogurt.
  • Taste with salt and olive oil and decorate with oregano.
  • Serve and enjoy.

Caprese salad

Insalata caprese is an excellent alternative for children  because it is much more appealing than a green salad. In addition, it contains cheese.

You can also serve the salad in a fun way by, for example, shaping the cheese into stars, animals, dinosaurs, etc. 

Do this:

  • Cut the following into thin slices: 2 large tomatoes,  2 pieces of mozzarella cheese.
  • Then add the chopped basil and arugula, but be careful with the latter. It has a bitter taste that children do not always like.
  • Taste with salt and olive oil.

Tuna sandwich

A tuna sandwich is filling, healthy, nutritious and practical. In addition, it is an easy way to get more fish in the children’s diet. The sandwich can be made in a few minutes and then enjoyed anywhere.

Ingredients:

  • A hard-boiled egg
  • A tomato
  • 1 to 2 lettuce leaves
  • Bread slices
  • A jar of natural tuna
  • 1 tablespoon mayonnaise
  • 1 tablespoon ketchup

Do this:

  • Cut the boiled egg into slices.
  • Then make the pink sauce by mixing mayonnaise and ketchup.
  • Then mix the tuna with the sauce.
  • Spread a thick layer of sauce over one slice of bread.
  • Then add the chopped, hard-boiled egg.
  • If you want, you can also have lettuce and tomato.
  • Finally, close the sandwich by placing the second slice of bread on top.

Shrimp cocktail

Although you have to use the stove to cook this dish,  shrimp still only need to cook for two minutes. The rest of the cooking is simple, both to prepare and in the final serving.

Ingredients:

  • ½ salad head
  • Coarse salt to taste
  • About ½ kg of shrimp
  • Just over 1 dl mayonnaise
  • 2 tablespoons ketchup

Do this:

  • Boil the prawns for 2 minutes  in water together with a handful of coarse salt.
  • Towards the end of cooking, rinse the prawns with cold water.
  • Then peel the prawns.
  • Then mix mayonnaise and ketchup in a separate bowl to make the pink sauce.
  • Mix the peeled prawns with the pink sauce.
  • Place salad leaves around the edges of the serving bowl
  • Finally add the prawns and decorate to taste. 

Stuffed eggs

Children generally like hard-boiled eggs. This recipe for stuffed eggs also allows you to combine the health benefits of the egg with the nutrients contained in the stuffing. In addition, it is a dish that  looks very enticing. 

Do this:

  • Boil 6 eggs in water  for 10 minutes.
  • Rinse them in cold water until cool.
  • Peel the eggs and then cut them in half.
  • Take out the yolks and save them in a separate bowl.
  • Mix the yolks with tuna or sautéed prawns until you get a creamy mixture.
  • You can also add mayonnaise  or cream cheese.
  • Fill the egg whites with the mixture.
  • Decorate with olives or pieces of tomato or pepper.
